Ingredients
Cod ingredients
- ½ pound cod
- 1 cup flour
- 1 tbsp chili powder
- 2 eggs
- 2 cups crushed Ritz crackers
- 1 cup canola oil
- 1 tbsp dried oregano
- 1 tbsp dried cilantro
- 1 tbsp dried dill
Dressing ingredients
- 1 ripe avocado
- 1 cup fresh cilantro
- 1 tbsp vinegar
- 4 tbsp olive oil
- juice from 1 large lime
- 1 tsp garlic salt
- 3 tbsp mayo
The rest
- 2 cups chopped cabbage
- 4 medium flour tortillas or any size or variety
- cooking spray
Instructions
- Lay out 3 bowls in a row. 1st with flour and chili powder then one with the eggs (beaten) and last a mixture of the Ritz and the dried spices
- Add oil to a frying pan and raise to medium temp
- Dredge cod in flour then eggs then Ritz mix and place in hot pan and cook till golden brown, then dry on a paper towel.
- While cod is cooking combine dressing ingredients in blender and run till smooth
- Chop up cabbage and mix with dressing in a bowl
- Lightly brown tortillas one at a time in a pan with a little cooking spray
- Add cod and cabbage mix to tortillas and enjoy
