My fibro has made going gluten free a daily necessity for me. I am not 100% because I have in the past found it hard to find great recipes that even my entire family would eat. I don’t have time to make 2 meals. Today’s post features fantastic gluten free dinner recipes from some pretty cool bloggers. I also added in 3 bonus dessert recipes as a sneak peek of the next post in this series, desserts!
Cheesy Potato Soup – as part of her meatless Monday series Kat at Generation of Savings posted this awesome one pot dinner. Quick, easy and yummy
Mexican Cheesy Bake – A super adaptable, cheesy recipe with a kick from Sanity in Suburbia
GF Shrimp Pad Tai – Shrimp Pad Tai is the best. This is as authentic as you can get without gluten.
Corn Fritters – Any kind of Fritter is a-ok in our book. This corn fritter would be an awesome compliment to any meal.
Sweet & Sour Chicken – One of my favorite flavors and this simple recipe is fantastic. I want to try to make the rice too!
Easy Paleo Seafood Soup – This soup can be easily adjusted to taste and is full of flavor!
Potato Lasagna – My friend Natalie over at Great Contradictions always has the best recipes! This is no exception. You still get that great flavor but it’s heartier.
Lentil- Quinoa Meatball Bolognese with Zucchini Noodles – I have just figured out how much I love the crunch of lentils and the taste of quinoa plus adore zucchini. This recipe is a win!
And for dessert?
Banana Pudding – One of our favorites in the My Crafty Life house and I love how Insights by April put a gluten free twist on it!
Deep Dish Skillet Brownie – one of the hardest parts of being gluten free is losing some of your favorite desserts. This skillet brownie will definitely make up for that!
Lemon Almond Cupcakes – A hidden surprise of lemon curd makes these cupcakes a citrusy delight!
