My husband and I work a lot. He works over 55 hours a week and I can work up to 35-45 hours a week running two businesses out of my house. Honestly it doesn’t give us much time to cook. If we do it has to be quick. SUPER quick. Most nights it ends up being taco salads or mandarin chicken with rice. Now that I learned this one pot pasta trick I think we will be having it more often. I just need to tweak it a bit next time with rice pasta or corn pasta because I had a reaction to the one I used for this recipe. Gotta love gluten intolerance! It was seriously delicious though! My husband had 3 plates full and my cat licked my bowl clean.
We started with this recipe – One Pot Pasta
I am going to show you how to make the original recipe and the recipe I created.
1 jar (1 lb. 8 oz.) Ragú® Sauce
2 cups water
8 ounces spaghetti, broken in half
I used an entire pound of pasta and 2 jars of sauce for my family.
Combine one jar of sauce (we used Ragú® Old World Style® Original) and 2 cups of water. Bring to a boil.
Add a half pound of pasta and bring the heat down to low.
Cook for about 16 minutes or until the pasta is tender.
Since we have a big family this recipe wasn’t quite large enough.
I expanded it to become a Southwest Chili One Pot Pasta Dish.
I browned some meat in a pan.
Chopped up some red peppers and a red onion.
Rinsed some black beans (YUM my favorite).
Took some leftover roasted corn from our cookout and sliced it off the cob.
Mix another jar of sauce, chili powder, two cups of water, the onions and peppers into the meat.
Add the pasta once the mixture comes to a boil and reduce heat.
Once the noodles soften, add the beans and corn. Mix in gently.
Continue cooking until the noodles are completely done and serve!
(This is when I also added the extra noodles I made previously)
We had leftover corn pancakes from breakfast the day before so we added those. It was delicious and SUPER quick. My husband had actually come home a little early that night so we got to cook together and spend time together (for once!) since we spent so little time on dinner. It was awesome. Even the cat had a good time. I love when my nights go so smoothly.
