Make breakfast a little easier
I am not sure about anyone else but this new school year has done a number on me. I blame getting older. Each year it seems to get harder and harder to adjust from the breezy schedule of summer back to the grind of school. I love how as adults we still have to get up for school and don’t even attend. That’s parenting for you. I have found over the years that the key to a good morning is preparation and simple, quick breakfast recipes. Find a recipe that packs a nutritional punch with the least amount of ingredients you can find. Taste is a bonus because let’s face it, good taste is the difference between reaching for a sugary pop tart or a breakfast cookie that will give them real energy.

There are many forms of breakfast. Sweet, savory and crunchy are a few. I am a fan of all of forms, especially a thing called breakfast for dinner.
I try and be gluten-free as possible because the reactions that I have been having have gotten worse over the last year. Luckily I know a blogger that has THE BEST recipes for a gluten free diet you can find. Natalie at Great Contradictions has a Gluten Free Cinnamon Roll French Toast Bake that is to die for. It’s super simple, has less than 10 ingredients and packs a flavor punch.
I unfortunately am allergic to coconut in all it’s forms but luckily for my kids…they are not! This recipe from Taking Time For Mommy for Homemade Granola Bars is packed full of protein and vitamins. I bookmarked this recipe to make when we run out of the current stash in the pantry. I love making them from scratch because I know they will eat them and I know what’s in them!
Like I said, breakfast for dinner is a favorite and I make it whenever the mood strikes me. If you are looking for a savory breakfast or dinner, Generation of Savings has a phenomenal Pumpkin French Toast Casserole with Raspberry Syrup that is perfect for the fall! It’s vegan, it’s easy and you can replace the oats with gluten free if needed. I am on team Pumpkin so this is perfect for me and my family. You can make it the night before and pop it in the oven in the morning or at dinner. You won’t have any complaints, they will clean the plate!
Another favorite of my crew in the morning and pretty much anytime really, are smoothies. I am always looking for a new recipe and I found an awesome on Sanity in Suburbia – Vegan Raspberry Smoothie . We have used cashew nut milk in this for myself and my middle daughter – we have almond allergies. Anything that will get protein and fruit into my kids I am all for.
I am the worst about eating breakfast. I have to make a point to eat it because I am either not in the mood or I forget. I need to get better about eating before I check my emails! For those days I do forget to eat I need something that is easy to grab and will go with my coffee. I found a brand that has THE BEST breakfast cookies. I don’t get a reaction from them, they have fantastic flavors and they pack a major protein punch. My husband has been using their granola in his yogurt in the morning which our budget appreciates because than he isn’t stopping to grab something on his run. My favorite is the Peanut Butter Chocolate Chunk. So my recipe for this breakfast? A handful of blueberries, 5 whole strawberries and a 1/2 cup of cashews along with on Erin Baker’s Breakfast Cookie. Throw a cup of coffee with it and it is the best breakfast. I stay full for hours. My kids love it too and it’s been a hit for the teenagers to have for school in the morning.
